Summer Tuna Avocado Salad
This salad is flavourful, fresh and simple. The arugula (or rocket as most of us know it) brings a nice peppery crunch, the avocado a soft, creamy compliment and finally tuna fish turns this simple salad into something filling and delicious!

How to do it
2 tablespoons freshly squeezed lemon juice
1 tablespoon balsamic vinegar
1 teaspoon Dijon Mustard
1 teaspoon honey
1/4 cup extra-virgin olive oil
4 to 5 handfuls baby arugula
300 gram canned tuna
1 medium sliced avocado
5-6 cherry tomatoes, halved
1 large crisp cucumber, sliced
1 red onion, sliced
olives
salt and black pepper
* Adjust the amount of each ingredient according to your taste
Whisk together lemon juice, balsamic, Dijon, and a pinch of salt and crank of pepper in a small bowl until well combined.
Add honey and slowly whisk in olive oil until well combined.
Arrange arugula in a salad serving bowl and top with tuna, avocado, tomatoes, cucumber, red onion, and olives.
Drizzle with the dressing and serve.
