Midsummer Special: Skagen Toast

Since the food (and drinks) are essentials of every Midsummer celebration, we have decided to share with you our secrets to make the perfect Skagen Toast!

Ingredients

How to do it

  • 200 gram prawns (shelled weight)

  • 0.5 dl  mayonnaise

  • 0.5 dl gräddfil or sour cream

  • ½ tbsp brandy or cognac (optional)

  • Salt and freshly ground white pepper to taste

  • 2 tbsp finely chopped dill

  • 4 slices of white bread

  • 25 gram butter

  • 50 gram caviar (optional)

  • 4 lemon wedges

  • 4 springs dill, for garnish

  • TOP TIP: Shrimps are a bit difficult to get as good flavour as possible. The best flavour is when you peel the shrimps yourself, yes it takes some time, but the flavour is worth it!

  • Shell the prawns (by hand) and pat them dry with kitchen paper. Keep them cold until required.

  • Mix the mayonnaise, gräddfil or sour cream, brandy, chopped dill, salt and freshly ground white pepper. Keep the mixture cold until required.

  • TIP 2: Ten minutes or so before serving, melt the butter in a large frying pan, add the bread slices and fry until golden brown on both sides.

  • Just before serving, add some of the sauce to the prawns until you have a nice consistency.

  • Serve the prawn mixture piled on top of the fried bread and garnish with a dollop of caviar, a sprig of dill and a lemon wedge.
