Cucumber and Tomato Summer Salad

How to do it
1 tablespoon white-wine vinegar
1 teaspoon grated lemon zest
1 tablespoon lemon juice
1 teaspoon salt
3 tablespoons extra-virgin olive oil
1 English cucumber, cut into small pieces
450 gram tomatoes, cut into small pieces
2 tablespoons chopped shallot
2 tablespoons chopped fresh parsley or basil
Whisk vinegar, lemon zest, lemon juice and salt in a large bowl.
Slowly pour in oil; whisk to combine.
Add cucumber, tomatoes and shallot and toss to combine.
Let stand at room temperature for at least 1 hour before serving.
Just before serving, stir in parsley (or basil).
